"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

2 packages of stuffing mix (Grandma had used Saltine crackers before too, we would typically use Pepperidge Farm)
1 32 oz package + 1 can of Chicken Broth
32 oz Italian sausage (2 rolls)
Diced Celery (to taste)
Diced white onion (to taste)
Ground sage, ground thyme, marjoram, salt & pepper (to taste)
1 egg optional

Directions:
Preheat oven to 325º or 350º (will have to experiment with that)
In a large bowl, soak stuffing in chicken broth
Cook sausage and crumble in pan
Drain sausage and add to stuffing mixture
Use mini food processor or dice celery and onion. Sauté in sausage grease until translucent. Begin with celery and add onion in a couple minutes later.
Add celery and onions to stuffing mixture
Add spices to taste
(Egg would go in at this point if needed better consistency)
Bake in oven for 15-20 minutes until warm

Personal Notes:
Poultry seasoning can replace the above spices. Grandma and I made this recipe every year, but she didn’t have a written recipe. We always went off taste and texture. If you have any questions about certain ingredients or steps feel free to ask me.
