One 17-oz. jar apricot jam
One 16-oz. bottle salsa
1˝ - 2 cups cubed and cooked pork
4 c. cooked rice

Optional:
1 onion, sliced vertically
1 bell pepper, cut into cubes
15-oz. can pineapple chunks, drained

Directions:
Directions:
Begin cooking rice. If using onion and/or bell pepper, use a skillet to sauté the vegetables in a little vegetable oil until crisp-tender. Stir in apricot jam and salsa until thoroughly combined. Add cooked pork and pineapple chunks, if desired, and heat through. Serve over rice.

This recipe evolved during the years my niece and I took trips in our motorhomes. We wanted meals that were fast and didn't require a lot of prep work or dishes.

If you don't have leftover pork, use cooked chicken or beef instead. Use hot or mild salsa, as you prefer. I once bought peach jam by mistake and used it instead of apricot, and it tasted fine.
