4 boneless chicken breast butterflied and pounded to 1/4 inch
1 cup flour
2 eggs beaten
2 cups panko bread crumbs
1/2 cup Parmesan cheese
8 ounces shredded mozzarella
32 ounces of your favorite marinara sauce
olive oil

Directions:
Directions:
Butter fly chicken breast and cover with saran wrap. using a mallet pound chicken breast working inside out to 1/4 inch thickness
Season flour with salt & pepper
Beat 2 eggs in a large bowl
In a large bowl add Parmesan cheese to bead crumbs mix well
Dredge both sides of chicken in flour, then into egg wash, then into bread crumbs.
On medium temperature, heat enough oil to cover bottom of frying pan Cook chicken until golden brown on both sides. 3-4 minutes per side
Heat oven to 400 º place chicken in oven proof platter cover with mozzarella. Bake 10 minutes or until cheese is melted. Serve over warm marinara and pour marinara over each breast
