1 bone in or boneless prime rib. Use only Choice or Prime cut. ( if bone is in there are usually only 2-3 bones so a rack isn't needed, but will be needed if it is boneless.)
Salt & pepper
Ceramic or metal pan about 3 inches deep. (no deeper or it steams the mat.) Do not use foil pans.

Coat prime rib with salt & pepper only. Do not cover. Start it cooking at 450º for 30 minutes. Then turn down oven to 350º. Check meat with thermometer in the center after it has cooked about 1 1/2 hours. Then check fairly often until it reaches 120º in center. Take the meat out, leave uncovered, & allow it to rest for 30 minutes before cutting & serving. It will cook more ( approximately 130-135 degrees will be a final reading. Serve with a horseradish, sour cream & mayo mixture.

Tara is a real gourmet cook! When Jeff & Tara lived in Amarillo we got together a lot to eat. I would visit with her on my favorite bar stool, & have a glass of wine while she made gourmet meals. We always had a great time and the guys did too! Great memories!
