- 1 head of cauliflower
- 6 cloves of garlic, smashed with the flat of a chef's knife and peeled
- olive oil
- juice of 1-2 lemons
- salt and pepper
- chili flakes (optional)
- grated Parmesan (optional)

Directions:
Directions:
Preheat oven to 500º.

Chop the cauliflower into florets. In a large bowl, toss the cauliflower with enough olive oil to coat, lemon juice, salt and pepper to taste, and chili flakes if desired.

Spread florets on a rimmed baking sheet and roast for about 15 minutes, stirring halfway through to prevent burning. Cooking time varies depending on your oven. When you think you have about 5 minutes left, sprinkle the parmesan over the cauliflower and continue to roast for a few more minutes.
