1 Tablespoon ground cumin
1 Tablespoon dried oregano
½ teaspoon red pepper flakes (optional)
2 Tablespoons olive oil, divided
1 pound ground beef
1 teaspoon salt
1 bell pepper, chopped
2 cups cabbage, chopped
2 cups spinach, frozen (5 cups fresh)
1 cup corn
2 garlic cloves, chopped
1 15 ounce can or jar of enchilada sauce
4 medium tortillas, cut into 1 inch strips
1 cup shredded cheddar cheese

Toppings:
cilantro
Greek yogurt or sour cream
avocado or guacamole
hot sauce
salsa

Directions:
Directions:
1. Mix cumin, oregano, and red pepper flakes. Set aside.

2.In a large skillet, heat 1 tablespoon olive oil, add the beef and ½ teaspoon salt and cook completely. Add half of the spices and mix well. Remove to another bowl and wipe out skillet.

3. in the skillet, add 1 tablespoon olive oil. over medium high heat, add the vegetables and ½ teaspoon salt. Cook until tender and liquid evaporated. Stir in the other half of the spices. Add the cooked beef mixture.

4. Add the enchilada sauce and combine, simmer on low for 2 minutes. Stir in tortillas so they get coated in the sauce. Top with cheddar cheese. Cover until cheese melts.

5. Serve with toppings as desired,
