½ cup softened butter
¼ cup brown sugar
2 eggs
¼ cup vegetable oil
¼ cup soya milk (or milk of choice)
½ tsp vanilla
1 tsp baking powder
¼ tsp salt
1 ¼ cup gluten free flour
½ cup gluten free rolled oats
¼ cup pumpkin seeds (crushed or whole)
1 ½ tbsp chia seeds
1-2 dried figs, small diced
2 tbsp chocolate chips (optional)

Before starting preheat oven to 375ºF and line cupcake/muffin tins of your choice

1. Combine butter, egg and brown sugar in a bowl. Stir well
2. Then add vegetable oil and vanilla. Stir well
3. In a separate bowl, combine flour, oats, baking powder, salt, pumpkin seeds, and chia seeds.
4. Add dry ingredients to wet ingredients. Stir well to combine.
5. Once combined, add dried figs and chocolate chips
6. Fill muffin tins ¾ full, then pop in preheated oven for 17-25 minutes
7. Let bites rest for 20-30 minutes OR until cooled before serving
