360g fresh or frozen blackberries
200g caster sugar
59ml water
1 tsp lemon juice
1 tsp vanilla extract

Directions:
Directions:
1: Place blackberries, sugar and water in saucepan over medium heat. If using fresh blackberries, make sure you rinse berries first! Stir occasionally.

2: Once mixture starts to bubble (It will only take a few minutes for this to happen so stay nearby) reduce heat to maintain a simmer.

3: Gently mash blackberries with a fork or a potato masher. A masher is much quicker!

4: Simmer for an additional 5 minutes. Add more cook time in 5 minute increments if you want to make a thicker syrup.

5: Strain the mixture through a fine mesh sieve into a clean glass jar.
Allow to cool and store in the refrigerator for up to two weeks.
