3 cups old-fashioned rolled oats
1/2 cup chopped nuts (walnuts, pecans, almonds, cashews, hazelnuts or a combination)
1/2 cup unsweetened coconut flakes
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom (can sub ground ginger)
1/2 teaspoon sea salt
1/3 cup honey
1/3 cup extra virgin olive oil
1 teaspoon vanilla

1. Preheat the oven to 275º and line a rimmed baking sheet with parchment paper.

2. In a large mixing bowl, combine the oats, nuts, coconut, cinnamon, cardamom, and salt.

3. Add the honey, oil, and vanilla and stir until evenly combined.

4. Spread out on the baking sheet. Bake for 40 minutes, stirring after 20 minutes, until lightly browned. Cool completely before breaking up the clusters.

5. Transfer to a widemouthed glass jar with a lid. Granola will stay fresh for several weeks.

6. Top a bowl of whole milk Greek yogurt with the granola and fresh berries or add milk and enjoy it like cereal.
