1 package mince meat of your choice , we like to use beef
2 medium carrots finely chopped
1 cup of corn ,we use frozen and let it thaw before
1 cup of rice of your choice , we use minute maid rice
you can add other vegetables of your choice such as green peas if you prefer

you will need a circular or small casserole dish

Directions:
1. Cook your meat on a frying pan as you normally would. Drain away any fat
2. Preheat the oven to 350
3. Add your carrots to the meat and your corn . Cook for about 10-15 min on a lower heat until your carrots are the texture you prefer.
4. Cook your rice in a separate pot
5. Add your meat to your casserole dish. Spread the rice on top. Cook in the oven for 10-15 minutes and serve.

We developed this recipe as a derivative of Sheppard's pie as Eliza didn't like gravy or potatoes but loved rice and meat and veggies! Now its a family favorite!
