Season the meat with prime rib rub and cover with heavy aluminum
Heat the oven to 400 degrees and cook for one hour. Do this about 4 hours before you want to eat.
Shut off the oven and let the meat sit.
About 1 1/2 hours before eating, turn the oven back on at 400 degrees until the meat thermometer is 145 degrees for medium rare or 140 degrees for rare.
Buy 3/4 pound per person, regularly served 14 people with 10 pounds.
