2 pounds yukon gold potatoes
6 sprigs thyme
3 cloves garlic
1 tsp. butter
1 cup white cheddar cheese, shredded
½ cup parmesan cheese, grated
1 cup heavy cream
salt and pepper

Directions:
Directions:
Preheat oven to 400°. Rinse and slice potatoes as thinly as possible. Place in pot and add water and salt. Bring to boil covered over high heat until tender. 4 to 5 minutes. Drain and pat dry.

Mince garlic and remove stems from thyme. Heat butter in a medium hot pan. Add garlic and thyme and cook until softened. About 2 minutes. Place this mixture in a bowl and add both cheeses.

Season potatoes with salt and pepper. Arrange ¼ of potatoes in a single layer on bottom of baking dish. Top with garlic-cheese mixture. Arrange next three layers the same way. Carefully pour cream over the top. Cover loosely with foil and bake until cheese is melted, about 20 minutes. Remove foil and continue cooking for 30 minutes. Cheese should be golden and bubbly.
