1 large or 2 medium eggplants sliced
1 large onion, coarsely chopped
2 or 3 slices of bread soaked in ˝ cup milk
1 cup chopped ham or shrimp

Directions:
Directions:
Peel and boil eggplant until tender. Sauté onions in bacon drippings or butter. Mash drained, eggplant, add onions, ham or shrimp, egg and slices of bread drained well. Season to taste top with breadcrumbs dot with butter bake at 350° for 30 minutes.
