1 medium onion
1/2 C. butter
1- 6oz. can sliced mushrooms, drained
2- 10 3/4 oz. cans beef consomme or 2 cans chicken broth
1/2 tsp. salt
1 C. rice

Optional:
1/2 C. sliced water chestnuts or almonds.

Directions:
Directions:
Saute onion in butter until clear. Pour into casserole dish. Add mushrooms, consomme, salt and rice; stir until well mixed. Put into preheated oven at 350 covered for 45 mins. Uncovered, and bake an additional 15 min. Note: May add 1/2 C. sliced water chestnuts or almonds.
