4 6-inch zucchinis
1 tbsp. fine fresh bread crumbs
2 tbsp. freshly grated parmesan cheese
6 tbsp. butter
½ tsp. dried tarragon, crumbled
2 tbsp. minced fresh parsley
Directions:
Directions:
Preheat oven to 400°. Allow butter to come to room temperature. In a small bowl toss the bread crumbs with parmesan cheese. In another small bowl cream together the butter, the tarragon, the parsley, and salt and pepper to taste. Keeping the stem intact and attached, cut each zucchini lengthwise into four ¼"-thick slices, spread some of the herb butter carefully between the layers and press the slices together lightly.

Separate the slices slightly to form a fan and bake the fans with ¼ cup water in a buttered baking pan, 15½X10½X1", in oven for 20 minutes, or until they are tender. Sprinkle the fans with bread crumb mixture and broil them under a preheated broiler about 4 inches from the heat for 1 to 2 minutes, or until they are golden.
