2 Tbsp Butter
1-1/2 C Chopped Dates (8 oz whole pitted dates, chopped)
3/4 C Sugar, white
2 Lg Eggs, beaten
1/2 tsp Salt
2-1/2 C Rice Krispies
1/2 C Nuts, chopped
1/2 tsp Vanilla
1-1/2 C Coconut, flaked
Directions:
Directions:
Put butter, dates, sugar and salt in heavy pan. Set burner at medium/low heat setting. Stir until dates are coated with sugar. Add beaten eggs. Cook about 10 minutes stirring constantly until bubbly.

Remove from heat and add vanilla, stir. Then fold in cereal and nuts, coating evenly. Form into balls or scoop using a 1-1/2” cookie scoop and drop onto flaked coconut spread out on a pie pan. No need to roll in your hands, just toss gently in the coconut. Place on a cookie sheet and refrigerate.

Makes 36 cookies using a 1-1/2” cookie scoop.
