3 c. AP flour
3 c. granulated sugar
1½ c. cocoa powder
1 T. baking soda
1½ t. baking powder
1½ t. salt
4 large eggs
1½ c. buttermilk
1½ c. brewed coffee
½ c. vegetable oil
2 t. vanilla extract

FROSTING:
1½ c. butter, softened
8 oz. cream cheese, softened
1½ c.cocoa powder
3 t. vanilla extract
7 c. 10-X sugar
+/- 1/4 c. milk

CAKE:
1. Preheat oven to 350º
2. Grease and flour or cocoa powder 3-9in. cake pans.
3. In mixer bowl, combine flour, sugar, cocoa, baking soda, baking powder and salt. Low speed to coming.
4. Add the eggs, buttermilk, coffee, oil, and vanilla. Beat on low speed until smooth.
5. Place 3 cups of batter in each pan. Tap gently to free any air bubbles.
6. Bake 30-35 minutes or until a toothpick inserted does out clean.
7. Cool pans on wire racks for 15 minutes.
8. Remove cakes from pans and allow to cool completely.
9. Frost with icing.

ICING:
1. In large bowl, cream together butter and cream cheese until fluffy, about 3 minutes,.
2. Sift together cocoa and powdered sugar.
3. Add mixture to bowl on low speed.
4. Beat in vanilla extract.
5. Add milk in small amounts until desired consistency.
6. Frost cake
7. Refrigerate.

Personal Notes:
Cake needs to be refrigerated because of the cream cheese frosting. If you use an alternative frosting recipe, cake can be kept at room temperature
