2 lbs.(3 large chicken breasts) boneless skinless chicken breasts cut into 1 inch cubes
1/2 cup all purpose flour
1/2 cup corn starch
2 large eggs beaten
2 tbsp vegetable oil, use more if needed
Sliced green onions for garnish (optional)

For the Sauce:
1 cup orange marmalade
1 cup choice of BBQ sauce
2 tbsp low sodium soy sauce

For the Sauce:
Mix the orange marmalade, BBQ sauce and soy sauce in a small mixing bowl

For the Chicken:
1. Dip the chicken in the beaten eggs, shaking off excess egg, then lightly coat with flour/starch mix.

2. In a large skillet or wok, heat the oil, and cook the chicken over medium high heat until lightly brown and slightly crisp. If cooking in batches, remove each batch to a plate, cover and keep warm

3. Add the sauce to the pan, stir in the chicken, and heat over medium heat until thick and bubbling - about 10 minutes.

4. Serve immediately with rice and choice vegetables!

Add some red pepper chili flakes to spice it up.

Add some garlic powder and a few tsp. of sesame seed oil for extra flavoring.

100% better than take out.
