1 ½ cups of chicken
2-3 zucchini sliced lengthwise
1-2 tbsp olive oil
2- Roma tomato's diced
1 tsp of minced garlic
3/4 cups of cream
lemon juice to taste
1 cup of Mozarella cheese

1. Preheat oven to 350º

2. Score zucchini (like you're dicing an avocado) and scoop out insides to use later-
don't scoop out so much that it leaves your zucchini too flimsy

3. Place zucchini boats in a large baking dish and drizzle with olive oil; Season with
salt and bake for about 20 minutes until tender

4. In a large skillet over medium heat, heat olive oil. Add chicken, chopped into small
cubes, and season with salt and pepper. Cook for 3-4 minutes

5. Stir in reserved zucchini, chopped tomato, and minced garlic, and cook until
fragrant

6. Add cream and lemon juice (to taste) and cook until slightly reduced (about 3
minutes

7. Fill zucchini boats with chicken mixture and top with mozzarella cheese. Cook
until cheese is bubbly, about 10 minutes

8. Garnish with freshly chopped parsley (optional) and serve
