Canned chicken/Rotisserie chicken (shredded)/fajita chicken
Taco seasoning
Red enchilada sauce (I use Old El Paso Mild)
Flour tortillas
Shredded cheese

Directions:
Directions:
Heat chicken in skillet with small amount of butter. Add taco seasoning and a little bit of water. In a separate frying pan, heat equal parts enchilada sauce and water. Put a little bit of sauce on the bottom of a casserole dish. Place a tortilla in the frying pan of sauce for a couple of minutes. Put it in the casserole dish, fill with some chicken and shredded cheese. Roll up and place the seam sign down. Repeat until you fill the casserole dish. Drizzle sauce over the enchiladas, sprinkle with shredded cheese, cover with aluminum foil and bake at 350º for about 15-20 minutes.
