Ingredients: 1¼ cup very cold butter (salted) cut into cubes
¼ cup very cold water
¼ teaspoon salt*
2 cups all-purpose floor
1 egg ( for egg wash)
1 can cherries (no sugar add)
4 apples ( I used several different varieties for better taste).
4 peaches or 1 can sliced peaches
*IF USING UNSALTED BUTTER THEN ADD ¾ TEASPOON OF SALT.

Directions:Using a food processor, fitted with the metal blade , add flour and salt to the bowl then add ¾ cup cold butter cut in cubes and pulse until butter is absorbed (about 10 to 12 one second pulses), then add the remaining ½ cup (cubed) cold butter 2 or 3 time to combine no more. Add the cold water and pulse four or five times just until the dough comes together to form a ball. ( It is really important not to over process the dough because the dough will not puff).
You can also us a Kitchen Aid stand mixer to make the dough using the flat beater attachment. Add flour and salt to the bowl then add ¾ cup cold butter cut in cubes, using speed 3 or 4 until the butter is absorbed. Add remaining ½ cup of butter (cubed) cold butter and mix until butter is combined. Add ¼ cup of cold water and mix until dough forms a ball. ( It is really important not to over process the dough because the dough will not puff).
On a lightly floured surface place the dough and with a lightly floured rolling-pin (lightly flour the dough so it doesn't stick). Roll into a rectangle approximately 12" x 18 " x ⅛". Fold dough in thirds then in half and refrigerate for 1 - 2 hours.
PRE-HEAT OVEN TO 375º
Prepare filling cherries, apple cinnamon or peaches. I dice the apples and peaches. Put filling into the 4 rectangles and brush the edges with egg wash then fold over and seal. I use a fork to seal the edges the brush tops with egg wash and bake for approximately 20 minutes. |
