4 eggs slightly beaten
½ c. vegetable oil
1 c. bisquick
3 cups thinly sliced, unpared zucchini
½ c. minced onion
½ c. grated parmesan/asiago cheese (any hard cheese)
2 Tbsp. fresh chopped parsley
½ tsp. salt
½ tsp. dried oregano
1-2 cloves minced garlic

Directions:

Preheat oven to 350º F
Grease 9 x 13 baking pan
Combine all ingredients. Spread evenly in pan (about ½in depth)
Bake until golden brown. About 35 minutes. Cut into 1" x 2" pieces. May be served warm or cold. Freezes well

This was a recipe from a very dear lady Josephine Bonavoglia. When we moved to Fox Chapel Road, Josephine quickly became like a mom to me. She was a Christian woman who helped me through a lot of junk in my teenage years by keeping the love of Jesus in front of me. Josephine and her husband, Ray were first generation born in the states. Many days were spent helping Josephine cook or bake. These memories continue to bring a smile to my face and a tear to my eyes. I will be sharing a couple more recipes that I have from dear Josephine.
