Into a dry bowl place:
1/2 cup egg white powder
1/3 cup allulose
2 tbsp nutritional yeast (reduce to 1 T or omit If desired)
1/8 -1/4 tsp quick rise yeast (Omit if desired, this is just for flavor)
1/4 tsp salt
2 tsp cream of tartar
1 tsp xanthan gum (use beef gelatin for a much healthier option! Or omit altogether)
Whisk those together. Add
1 cup liquid egg whites. (OPTIONAL: Add 1/4-1/2 tsp Pineapple Extract to the liquid egg whites)
Stir to combine. Beat on high till stiff peaks form. Turn the speed down to half, and slowly add
5 egg yolks, one at a time. If the batter starts to fall, stop at 3 yolks. I turn the speed back up for just a few seconds to fully incorporate.
Cover a baking sheet with parchment paper and spray with nonstick oil. You can spray your scoop (1/4 cup, 2 Tbsp, 2 oz scoop!) with oil, inside and out. Scoop batter onto the pan with the rolls barely touching.
Bake at 325 for 15 minutes then turn off the oven. Set a timer for at least 15 minutes and let them sit in the oven till it goes off.
