1 2/3 c all purpose flour
1 c. sugar
3/4 t salt
1 t. baking soda
1/2 t. ground cloves
1/2 t. ground nutmeg
1/2 t. ground cinnamon
1/4 t. baking powder
2 eggs
1/2 c. vegetable oil
1 1/4 c. mashed cooked pumpkin (can substitute canned pumpkin)
1/2 c. water

Optional: dates or nuts, as desired.

Combine first 8 ingredients in a large bowl. Add eggs, oil, pumpkin and water. Beat well. Fold in dates or nuts, if desired. pour into greased loaf pan or muffin pans. Bake at 350º for 1 hour for loaf, 15 minutes for muffins.
