430g water
100g Sourdough start
10g salt
512g flour

Directions:
Directions:
Combine in a bowl and mix until just combined.
Cover for 30 minutes. Stretch and fold. Repeat 3 more times if time permits.
Cover and set on counter overnight.
The next morning, drizzle olive oil on dough and hands. Shape into a rough rectangle, fold, and place in loaf pan.
Cover and set aside to rise for 5-6 hours. When the dough has nearly reached the rim, transfer to the oven.
Bake at 425º for 20 minutes. Lower temperature to 375º and bake for 25 minutes more.
Let cool 30 minutes before slicing.
