6 large russet potatoes
Italian red wine vinegar (preferrably Progresso brand)
Salt
Pepper
Dried parsley flakes
Kraft Mayo
Pickle Relish
Paprika

Directions:
Directions:
1. Add potatoes to a large pot of water. Bring to a slow boil and cook potatoes until you can easily poke with a fork. Don't overcook.
2. Once cooked, drain the potatoes. Then quickly peel the potatoes, while hot. This can be tough - hold the potatoes with a paper towel and try to peel quickly. The skins should come off the potatoes easily.
3. Spread peeled potatoes onto a cookie sheet. Cut potatoes in half and score each half.
4. Sprinkle wine vinegar onto the peeled, halved and scored potatoes. The potatoes should be covered but not soaked.
5. Sprinkle salt and pepper onto potatoes.
6. Let potatoes sit for 10 minutes.
7. Cut potatoes into bite sized pieces into a large mixing bowl.
8. Add 2 to 3 tblsp of dried parsley flakes and 10 rounded tblsp of Kraft mayo.
9. Slowly fold parsley flakes and mayo into the potatoes.
10. Drain the relish - put 10 tblsp of relish into a colander with tiny holes. Press relish to release as much liquid as possible.
11. Add relish to the potato mixture and fold.
12. Pour potato salad into a serving dish and sprinkle the top with paprika.
13. Refrigerate to chill before serving.
