2 pounds turkey sausage, casing removed, cooked and finely minced
2 bunches green onions/chives, finely minced
3 carrots, finely minced
5 celery stalks, finely minced
1/4 head cabbage, salted and drained, finely chopped
2 tbsp fresh ginger
6.5 tbsp soy sauce
10 tsp sesame oil
2 tsp pepper
salt to taste
3 eggs
frozen dumpling wrappers, thawed

Directions:
1. Cook turkey sausage in a large skillet. Transfer to food processor and finely mince. Transfer to a large mixing bowl
2. Mince green onions, carrots, celery and cabbage in food processor separately. Transfer to large mixing bowl with turkey sausage
3. Add ginger, soy sauce, sesame oil, pepper and salt to turkey sausage mixture
4. Assemble dumplings by placing on teaspoon of turkey sausage mixture into dumpling wrapper, moisten edges of wrapper with water. Seal dumpling and crimp edges
5. Steam dumplings for 10 minutes. Transfer to pan with small amount of vegetable oil and fry to brown one side of the dumpling
6. Serve with a soy sauce and old bay sauce mixture to taste
