8 cups bread cubes - Pepperidge Farm
1 stick salted butter (extra to butter the cooking dish)
2 cups finely chopped yellow onion
1 cup finely chopped celery
3 cloves garlic, minced
1 tsp salt
1/2 tsp freshly ground black pepper
1/4 cup chopped parsley
3 tbsp chopped fresh sage
1 tbsp chopped fresh rosemary
1 tbsp chopped fresh thyme
1 lb sweet Italian sausage, casings removed
2 large eggs
2 1/2 cups reduced sodium chicken stock

1. Set oven to 350 degrees and butt a 9 x 13 inch baking dish
2. In a large skillet, melt the butter over medium heat. Add the onions, celery, garlic, salt and pepper. Cook until softened
3. Remove from heat and stir in the herbs - salt, pepper, parsley, sage, rosemary and thyme
4. Transfer mixture to a bowl and add bread cubes
5. In the same large skillet, cook the Italian sausage. Break sausage into small pieces. Cook through and until just brown. Add to the bread cube mixture
6. In a small bowl, whisk together eggs and chicken stock
7. Pour eggs and chicken stock over the bread cube mixture. Mix until thoroughly combined and bread cubes are soft
8. Transfer mixture to the prepared baking dish and cover tightly with foil
9. Bake for 40 minutes. Remove the foil and continue baking until the top has browned about 30 more minutes
