Grandma's Posole Recipe

6 chicken legs
Salt (to taste)
4-6 small Milpero tomatillos. If its regular tomatillos, use 2-3
2 Vine tomatoes
2 cloves fresh garlic (must be fresh!)
1/4 of a small yellow onion
Pinch of ground cloves
1 tablespoon Oregano
Pepper to taste
1 dried pasilla pepper (take seeds out)
Hominy (25 ounce can)

Directions:
-Start by soaking your seedless/stemless pasilla pepper in hot water to soften.

-In the meantime, put the chicken legs in a pot. Fill with enough water to cover the chicken legs.
-Salt the water
-Start to bring water to a boil.


While you are waiting for the water to boil, put your tomatillos, tomatoes, garlic, onion, ground cloves, oregano, pepper, and soft pasilla pepper in a blender. Mix well. (I use the soup setting) *The pasilla pepper is what gives posole it's color.

-Add the salsa & hominy to the pot & cook for 25 minutes.

*make sure you drain hominy before you add to pot
