1 can artichokes
5 eggs
1 small mozzarella (8 oz)
¾ cup grated cheese
2 cloves garlic
white pepper
olive oil

Directions:
Directions:
1. Preheat oven to 375 degrees
2. Crush garlic and saute in olive oil
3. Drain artichokes & coarsely chop
4. Grate mozzarella
5. In a bowl, beat eggs, and add mozzarella, grated cheese and artichokes
6. Add the garlic and olive oil to bowl mixture
7. Mix all together and place in a pyrex pie plate
8. Bake at 375 degrees for 45 minutes.
9. Enjoy!!

My Grandma makes this artichoke pie for many family gatherings and holidays. We cut it into pieces and enjoy as an appetizer. My Grandma is simply the best and when she makes this she always prepares an extra one for me, so I can keep it in the freezer and use for a busy night so that the kids can still have a home cooked meal.
