4 ears of corn
1/4 cup Sour Cream
1/4 cup of mayonnaise
1/2 cup of Cotija cheese, crumbled ( or feta)
2 cloves of garlic finely minced
1/4 tsp. sea salt
Juice and zest of 1 lime
1/4 cup of Cilantro, finely chopped
1/2 tsp. chili powder
Elote seasoning (trader joes or see my recipe for elote in misc.recipes )

preheat oven to 450 shuck corn then wrap in foil and bake 25-30 min.
Mix the topping sauce by stirring together the Sour Cream, mayonnaise, chili powder, garlic, lime zest and juice brush corn with mayo mixture.
On large plate spread out cheese and cilantro then roll corn over it be sure to cover as much of the corn as you can sprinkle with elote seasoning and bake for about 7 more minutes.
