5 lbs. russet potatoes
1 cup vinegar
4 celery stalks chopped
5 hard-boiled eggs , peeled and chopped
1 cup + dukes mayonnaise
1 tablespoon yellow mustard
3/4 teaspoon kosher salt
2 teaspoon freshly ground black pepper
paprika for garnish

Directions:
Directions:
Add the potatoes to a large pot of cold water and bring to a boil. Reduce the heat to a lightly rolling boil over medium heat and add 1 teaspoon of kosher salt and vinegar.
Cook for until the potatoes are easily pierced with a fork about 15-18 min. Drain and set aside until cool enough to handle.
Cut into 1ince pieces. Transfer potatoes to a large mixing bowl .
Add the celery and chopped eggs to the potato mixture.
In a medium bowl, mix the Mayo, yellow mustard, and salt and pepper. Fold into the potato mixture and season with more salt and pepper to taste.
If needed add more Mayo.
Sprinkle with paprika and chill in fridge.
