2 C. whole buttermilk
1 large egg
1 tbsp. vegetable oil
1 3/4 C. self-rising cornmeal (I prefer White Lily)

Directions:
Heat iron skillet, or muffin pan, or cornstick pan that is well greased at 450º for 5 minutes. Whisk together first 3 ingredients in large bowl until blended. Stir in cornmeal. Spoon batter evenly in desired pan. Bake at 450º for 15-18 minutes or until golden brown.
