4 - large Russet potatoes
1 medium onion
2 eggs
kosher salt
ground pepper
1/4 cup matza meal
Peanut oil

Directions:

1. Grate potatoes and onions

2. Add eggs, salt and pepper, and matza meal.

3. Drop by tablespoons into very hot oil which is almost deep enough to cover the pancakes. Fry over high heatbuntil browned on one side. Flip to other side

4. Drain on paper towels

5. You can freeze these in-between paper towels and wrapped in plastic and then foil.
If using from freezer pop in hot oven 375-400 for 15 minutes you don't have to defrost

do not move the pancakes until you see that they can move themselves very easily
They have to be very brown - don't burn

These are very good to keep on hand in the freezer.
