• 3 tbs oil
• Lots of Zucchini (Grandma Maria says like 9 but I like it super tomatoy so I only use like 5)
• Salt to taste
• 4 oz tomato sauce or fresh tomatoes
• ½ an onion
• Mozzarella cheese

Directions:
Directions:
1. Heat oil in a 3-4-inch-deep pan.
2. Slice up the zucchini, leaving the skin on, then add to pan. Add salt and tomato sauce, and onion to pan. Mix everything together
3. Reduce heat, cover, and cook for 20 minutes.
4. Once cooked, slice the mozzarella and place on top of zucchini mixture. Put cover back on pan and cook for another 2-3 minutes.
