1 package angel food cake, prepared according to package directions, or 1 bakery angel food cake
1 envelope unflavored gelatin
Approximately 15 1/2 ounces canned crushed pineapple in its own juice (1 1/2 cups)
3 to 4 tsps powdered sugar, to taste
1/2 tsp vanilla
1 1/2 cups whipping cream
Fresh fruit, such as strawberries or kiwi, for garnish

Split cake into two layers. Soften gelatin in 1 tablespoon cold water in top of double boiler. Drain pineapple, reserving juice. Add 1/3 cup drained juice, pineapple, powdered sugar and vanilla to gelatin. Cook over hot water, stirring constantly, until gelatin is dissolved. Chill until thickened.

Whip cream until stiff; gently fold into pineapple mixture. Spread mixture between layers and on top and sides of cake. Chill until ready to serve. Garnish with fresh fruit.
