1 pkg Lipton Chicken Noodle Soup
5 cups water
¼ cup pastina
1 potato - diced
1 medium zucchini - diced
1 egg
1 tbsp parmesan cheese - grated
½ tsp chicken bouillon (for extra flavour)
Directions:
Directions:
Whisk the egg with the parmesan in a small bowl and set aside. In a medium pot, bring 5 cups of water to a boil.
Peel and dice the potato.
Wash and chop the zucchini - If using large zucchini, remove the inner seeds.
Add the potato and pastina to the boiling water and cook 5 minutes. Add the Lipton soup package and the zucchini cook until done - about 5 minutes.
Turn off the burner and add in the whisked egg and cheese. Stir until cooked. Enjoy.

Mom's adaptation of Lipton Soup is still one of my all-time favorites. Quick, easy, and packed with her signature touch, it’s a comforting bowl of nostalgia. Growing up in the Paonessa house, Mom cooked everything from scratch—no canned goods, no packaged foods. It wasn’t until I got married that I even tasted things like canned soup or Kraft dinner.

How Lipton soup packages made their way into Mom's kitchen is still a mystery, but once they did, she embraced them in her own special way. Mom elevated that simple soup by adding egg and zucchini. It became a healthy, hearty meal, making it extraordinary and filled with love. Every spoonful reminds me of her warmth, and her knack for making life just a little more delicious.
