4 boneless chicken breasts;
1/4 cup of oil;
1/4 cup onion;
1 garlic clove;
1 julienne celery;
1 julienne red pepper;
1 julienne carrot;
salt and pepper to taste;

Directions:
Directions:
Place chicken breast between waxed paper and pound until they are of even thickness. Use a large skillet or saute' pan. Heat the oil and brown chicken breast on both sides. Remove from pan and set aside. Saute' onion, garlic, celery, pepper and carrot until transparent in the same oil the chicken was browned in. Return breasts to pan and simmer to let flavors blend. (Optional: add 1cup of white wine and simmer until wine evaporates.)
