2 lb chicken breast, legs, thighs, skin on and bone-in
3 tbsp olive oil
6 - 8 cups water
3 carrots - chopped
2 celery stalks - chopped
1 onion - diced
½ cup tomato sauce or 4 oz crushed tomatoes
¼ cup parsley - chopped
½ tsp salt and pepper
1 potato - chopped (optional)
1 cup of pastina, orzo or ditalini (I like to use egg noodles)

*Chicken bones gives this recipe the flavour it needs, however if you want to use chicken without the bones, add chicken bouillon mixed into the water for extra flavour. Some changes I like are: 3/4 tsp thyme instead of parsley, 1 chopped parsnip and egg noodles instead of pastina.

Put chicken pieces in a stock pot, cover with water and bring to a boil. Allow to boil 1 minute. Strain in a colander, remove most of the skin and rinse with cold water. Set aside.

In a large soup pot, sauté the oil, onion and celery, for 5 minutes. Add the chicken, salt, pepper, tomato sauce and enough water to cover the chicken. Heat to a boil and gently simmer 1 hour. Add parsley, carrots and potatoes. Continue to simmer until veggies are soft. Remove chicken pieces into a separate bowl. Use 2 forks to shred the chicken and remove the bones. Return the chicken to the pot. Serve the soup. .

Mom often broke spaghetti into pieces instead of using a small pasta. You can cook the pasta in the soup or separately for less starchy soup.

Nonna’s Chicken Soup was more than just a meal; it was the heart of her home and the essence of her love. Walking into her house, you’d instantly know the soup was on. The aroma would wrap around you like a warm hug, so inviting and comforting. Her downstairs kitchen was a magical place, always filled with the wonderful smells of her cooking. There was never a moment when something fresh wasn’t bubbling on the stove or baking in the oven. You will find Nonno on the couch resting from his outdoor duties, always with his half-moon head pillow around his neck.
Nonna never let anyone leave her house without offering food, whether it was a steaming bowl of soup to enjoy right then or containers of delicious leftovers to take home. She loved to make sure everyone was cared for, always cooking with love and care in every dish. Her kitchen wasn’t just a place where meals were prepared; it was a sanctuary, a gathering spot where memories were made, and traditions were passed down. Nonna’s soup, like her, was warm, nourishing, and filled with love - proof that home isn’t just a place, but a feeling she gave to all of us.
