½ lb + 4 tbls Unsalted Butter. (2 sticks plus half of another stick). Soften butter.

⅔ cup sugar

2 cups flour

1¾ cups ground almonds (leave skin on)

⅛ tsp ground cinnamon

Powdered sugar

Make dough the night before, leave in a ball in refrigerator wrapped in wax or parchment paper.

Take small chunks and roll out. (Instead of using a rolling pin, I use my hands to flatten the dough out, as it is too difficult to do it with a rolling pin).

Use a circular cookie cutter to cut out cookies - Half should have a whole in the middle to be used as the top of the Linzer tart.

They sell cookie cutters specifically for making Linzer Tarts. If not, you can just use a small glass to cut them and for the tops, you can use a sewing Thimble to put the hole in the center.

Grease baking pan with butter, and bake in 350 degree oven for approximately 15 minutes. Let cookies cool and then spread raspberry preserves on the bottom part of the Linzer Tart and cover with the cookie with the whole in the center.

Sprinkle with powdered sugar.
