Cookies

Ingredients:
Ingredients:
1 3/4 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/2 c. cocoa powder
1/2 c. butter, softened
1 c. granulated sugar
1 egg
1/4 c. milk
1 tsp. vanilla
12 large marshmallows

Directions:
Directions:
1. In a medium bowl, whisk together the flour, baking soda, salt and cocoa powder.

2. In the bowl of a stand mixer fitted with a paddle attachment, cream together the butter and sugar until light and fluffy, about 2 minutes. Add the egg and vanilla, and mix to combine. Then, pour in the milk and mix until combined.

3. Add the flour mixture, and mix until the mixture forms a dough. Scape the sides and bottom of the bowl to make sure everything is incorporated.

4. Refrigerate the dough for 30 minutes. Then preheat the oven to 350º F. Line your baking sheets.

5. Roll dough into 1 " balls and place 2" apart on baking sheets. Bake for 8 minutes. While the cookies are baking cut the marshmallows in half.

6. Remove the cookies from the oven. Place a 1/2 marshmallow cut side down on top of each cookie and press gently so it sticks. Return cookies to the oven and bake another 3 minutes.

7. Remove cookies from oven and let cool for 5 minutes.

8. When cookies are cool, make the frosting.

9. Place a dollop of frosting on top of each cookie, coaxing it to slide down the marshmallow with a spoon, letting the marshmallow show through a little.

10. Let the cookies sit for at least 30 minutes to let the frosting harden. Enjoy!

Personal Notes:
When topping these cookies with the frosting, leave a little bit of marshmallow showing so people can see what's inside!

Make sure that the fudge frosting has set completely before storing the cookies. Put wax paper between the layers of cookies when storing. You can freeze these up to 2 months.
