1/2 cup butter (softened by sitting on counter 1 hour)
1/2 cup creamy peanut butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1/2 tsp vanilla
1 1/2 cup flour
3/4 tsp baking soda
1/2 tsp salt
40 small reese's peanut butter cups (unwrapped ahead of time)
40 mini-muffin paper baking cups
USE Mini-muffin tins

Directions:
Directions:
1) Cream together the butters and sugars.
2) Beat in eggs and vanilla.
3) add flour, salt and soda and blend well.
4) Shape into 1-inch balls and place into 1 1/2 inch muffin tins with or without paper cups.
5) Bake at 350º for 8-10 minutes (until light brown on top). Bake 325º for dark pan.
6) Remove from oven and immediately press the peanut butter cups into the middle of the cookie while cookies are still in the pan.
7) Let cool 10 minutes in the pan and then remove.
