2/3 cup granulated sugar
2 large eggs
2 oz unsweetened chocolate, chopped
1 tsp pure vanilla extract
1/3 cup unsalted butter, room temperature
2/3 cup heavy cream
1/4 cup powdered sugar
1 pre-made, 9 in. chocolate pie crust
whipped cream
shaved dark chocolate for garnish

In small sauce pan, whisk granulated sugar and eggs until well-blended. Cook over low heat, whisking constantly, until mixture reaches 160º. Remove from heat, add vanilla extract and chocolate, stir until smooth. Cool for approximately 5 mins. In a stand mixer with paddle attachment, cream butter until fluffy, add chocolate mixture and beat on high for 5 minutes. In another large bowl, beat heavy cream until it begins to thicken. Add powdered sugar, mixed until stiff peaks form. Fold in chocolate mixture. Pour into pre-made pie crust and refrigerate for at least 4 hours. Garnish with whipped cream and shaved chocolate. Enjoy!
