16 hard boiled eggs
30 oz canned, whole sliced beets
2 cups apple cider vinegar
2 cups water
1 cup sugar
1/2 tbsp pickling spice
2 tbsp kosher salt
Quart jars

Directions:
Directions:
In a large saucepan: add vinegar, water, sugar, salt, and pickling spice along with beet juice. Stir together and simmer for 10-15 mins, until sugar and salt dissolve. Let cool. Place liquid, eggs and beets in large mason jars. Seal jars and set in fridge for 7-10 days. Enjoy!
