2 1/2 c flour
1/2 tsp each baking powder, baking soda, and salt
3/4 c soft butter
1 egg
1 tsp vanilla
2 T lemon juice
Zest of 1 lemon
1/4 sparkling (super fine) sugar
Directions:
Directions:
Preheat oven to 375* and line 2 baking pans with parchment paper. In a small bowl, mix flour, baking powder, baking soda, and salt. Set aside. In a large bowl, mix together butter and sugar until combined then add egg. Add lemon juice and zest and mix. Add dry ingredients until combined. Scoop cookies and roll top in sparkling sugar. Place 2 inches apart on baking sheets. Bake until golden, about 12 minutes.
