4 large tomatoes
1 sweet onion
1 bulb of garlic
dried basil
salt & pepper
1 small can tomato paste
1 can coconut milk
cumin
nutmeg
dried basil



Directions:
Directions:
Mix tomatoes, onion, garlic, basil, and salt & pepper. Drizzle with extra virgin olive oil, and roast at 350ºF for 50 mins. After roasting, transfer into a soup pot; add tomato paste, coconut milk, cumin, and a dash of nutmeg. With an emulsifying blender, blend everything together. Serve topped with fresh basil.
