  • 2 eggs (beaten)

  • 1 cup-sugar

  • ½ tsp-flour

  • ½ cup-buttermilk

  • 1¼ cup- Baker's coconut

  • 1/4 cup-melted margarine or butter (cooled)

  • ¾ tsp-vanilla


Directions:

Mix pie filling:
Beaten eggs, sugar, flour, buttermilk, Baker's coconut, butter, and vanilla.


  • Whip eggs

  • Blend sugar and flour and mix with beaten eggs

  • Add all other ingredients and pour into unbaked pie shell.

  • Bake 400º for 12 minutes; THEN turn oven down to 350º for 25 -35 minutes

  • (Tip: bake until top of pie starts to have a few light golden brown places)
