3 T. extra virgin olive oil
2c. diced yellow onion
3 c. boneless, skinless chicken, cooked and cut in bite size pieces
1 T. minced garlic
2 - 15 oz. cans white beans, drained and rinsed
32 oz. chicken stock
2 - 4 oz. diced green chilies

1 t. ground cumin
2 t. dried oregano
1 t. ground coriander
2 T. lime juice
Salt and pepper to taste

Chopped cilantro, shredded Monterey Jack cheese, sour cream, and crushed tortilla chips for serving

Heat the olive oil in a 4 quart pot over medium heat. Add onions and sauté until soft and translucent. Add chicken and saute until no longer pink. Stir in garlic and saute until fragrant (about 30 seconds). Add chicken stock, beans, chilies, oregano, cumin and coriander. Turn the heat to low and simmer for 20 minutes. Stir in lime juice. Remove from the heat. Season to taste with salt and pepper. Serve in bowls with cilantro, shredded cheese and tortilla chips.
