1/2 pkg frozen spinach, thawed
3 large boneless chicken breasts, cut into strips
6 oz Mozzarella cheese block
1/2 cup extra virgin olive oil
2 cups Italian bread crumbs
1 tsp Italian seasoning
1 large onion, sliced

Directions:
Directions:
Preheat oven to 350.
Cut cheese block into 3 cubes. Spread spinach on top of cheese cubes. Wrap cheese and spinach with chicken strips. Secure with toothpick. Dip chicken strips in olive oil and roll in bread crumbs. Spray shallow baking dish with cooking spray. Place chicken strips in baking dish. Place sliced onions on top and sprinkle with Italian seasonings. Bake for 15-20 minutes or until chicken is cooked through, and cheese has melted, and bread crumbs are browned.
