20 Ritz crackers, roughly chopped
1 c. white sugar
1 c. chopped pecans
3 egg whites
½ tsp. baking powder
½ tsp. vanilla extract
unsalted butter as needed for pan
whipped cream or non-dairy topping to serve

Directions:

preheat oven to 325º
generously butter pie pan with unsalted butter, set aside

Combine crackers, pecans, vanilla, & sugar, set aside.

Combine egg whites & baking soda, beat until stiff peaks form.

Gently fold in cracker mixture, spoon into buttered pie pan, bake for 30 minutes. Remove and cool to room temp for at least 4 hours.

Slice and serve with whipped cream or non-dairy topping.
